In the new world of craft brewing and brew pubs St.John Hammond has drawn on a 30-year career focused in hospitality and brewing to create a niche market in expert brewery and hospitality consultancy.
The path that led him here draws from his experience as an owner-operator of iconic hospitality-based businesses in Perth, Western Australia with a major focus on food, beverage and brewing. Within this realm he has developed a wide-ranging skill set that covers all aspects of the hospitality and craft brewing industries.
Formal training in Hotel Management and Hospitality set the foundation for his foray into the industry and what ultimately became a very hands-on approach to his career with experience in every aspect of the hospitality and brewing scope. This includes front of house service, food production, brewing, brewery design and interface, business strategy, development and reporting.
His hospitality experience evolved into a diverse range of business acquisitions that cover every genre of the industry from brew pubs, live music and performance venues and night clubs to boutique hotels and marinas. St.John has owned and operated some of Perth’s most distinctive hospitality businesses including Club Bay View, The Hip-E Club, The Claremont Hotel, The Marina Mindarie and the Rosemount Hotel giving him a unique insight into what drives and motivates consumers in the hospitality and entertainment arenas.
In the last 10 years St.John expanded his interests into the world of brewing and brewery consultancy. His first milestone was helping develop the award-winning Indian Ocean Brewing Company at The Marina Mindarie — a craft brewery that serves food and boasts live entertainment perched on the edge of a marina and the Indian Ocean. His involvement in the craft brewing industry led to the establishment of Flying Foam, an international food and brew consultancy business.
Flying Foam has since designed, procured, installed and commissioned world-class craft breweries such as The Brew, Kerry Hotel by Shangri-La, Pudong, Shanghai and the Northbridge Brewing Company, Perth, Western Australia. Launched to acclaim, both projects have won national and international awards for design and brewing.
St.John is an all-round, hands-on operator with a high level of skill and success within the hospitality and craft brewing industries. His skill set is well suited for integrated food and brew operations or standalone brewery design and consultancy.
